Wine-Infused Meat Ragout

This delicious meat sauce can be eaten with pasta, on polenta or in sandwiches such as sloppy joes.

Marsala is a fortified wine and keeps longer than white or red. Generally, you should use dry wine for cooking, though this recipe calls for Marsala, which is sweet. For special occasions, make this dish with whipping cream instead of chicken stock.

The variety of pear and its degree of ripeness will determine how long it takes for a pear to become tender. This dish makes a great low-calorie dessert on its own, but you could also serve the poached pears over vanilla ice cream, pound cake or angel cake.
