Apple-Cranberry Custard Flan

2 apples, peeled and thinly sliced
½ cup (125 mL) sugar, divided
1 tsp (5 mL) grated orange rind
¾ cup (175 mL) cranberries, fresh or frozen
1 cup (250 mL) real whipping cream
½ tsp (2 mL) vanilla extract
2 tbsp (30 mL) apple jelly
- Generously butter a 9-inch (23 cm) quiche pan or pie plate. In bowl, toss apples with ¼ cup (50 mL) sugar and orange rind. Arrange over bottom of prepared pan. Sprinkle with cranberries.
- Beat together eggs, whipping cream, remaining sugar and vanilla until blended. Pour evenly over fruit. Bake at 350ûF (180ûC) for 40 to 45 minutes or until puffed and golden. Cool on rack.
- In small saucepan, melt apple jelly over low heat and brush over flan. Serve warm or at room temperature.
