Bresaola and Goat Cheese Rolls

50 ml/1/4 cup olive oil
1/2 lemon, juice only
1 clove garlic, crushed
2 pieces (100 g each) goat cheese at room temperature
Salt and freshly ground pepper to taste
16 slices bresaola (Italian air-dried beef)
In a small bowl, combine the ingredients for the vinaigrette with a fork.
In a bowl, beat the cheese to make a smooth paste. Add a few drops of vinaigrette and season to taste. Blend well with a fork.
Spread 8 slice of beef on a work counter and place 1/8 of the cheese filling on the edge of each slice. Roll up like cannelloni.
Place 2 rolls on each individual plate, and garnish with 2 plain slices of bresaola.
Remove the garlic from the vinaigrette and pour the rest over each plate before serving.
