Brussels Sprouts With Caramelized Onions

1 lb (500 g) Brussels sprouts, trimmed and halved
2 tbsp (25 ml) olive oil
1 medium white onion, halved lengthwise and sliced
1 medium red onion, halved lengthwise and sliced
1 tbsp (15 ml) fresh thyme, chopped, or 1 tsp (5 ml) dried thyme
1/2 tsp (2 ml) salt
1 tbsp (15 ml) white balsamic vinegar
- Bring 1 inch (2.5 cm) of water to a boil in a large saucepan over medium-high heat. Insert a steamer basket, reduce the heat to medium, and add the sprouts. Cover and cook until crisp-tender, about 7 minutes.
- Meanwhile, heat the oil in a medium saucepan over medium heat. Add the onions and cook, stirring occasionally, until browned, about 4 minutes. Add the thyme and salt, then reduce the heat to low, cover, and cook until very tender and browned, 10 minutes. Stir in the vinegar.
- Place the sprouts in a serving dish, top with the onion mixture, and toss to coat.
