Celeriac Salad with Apple and Fruilano

45 ml (3 tbsp) freshly squeezed lemon juice
5 ml (1 tsp) Dijon mustard
1 green apple, peeled, seeded and diced
450 g (1 lb) celeriac in fine julienne, blanched and patted dry
60 ml (4 tbsp) extra-virgin olive oil
375 ml (1½ cups / 170 g) friulano cheese, in 0.5 cm (¼ inch) dice
12 seedless green grapes, halved
50 ml (¼ cup) pine nuts, toasted
8 sprigs arugula
- In a bowl, combine the lemon juice, mustard and apple.
- Add celeriac, oil, cheese and grapes. Mix well.
- Refrigerate one hour.
- Sprinkle with pine nuts and arugula and serve.
