1/2 cup freshly squeezed lime juice
1/3 cup peanut oil
2 garlic cloves, minced
1/4 cup chopped cilantro
1 jalapeño pepper, minced
1-1/2 pounds cooked, shelled, and deveined shrimp
- Combine lime juice, oil, garlic, cilantro, and jalapeño in a small jar with a tight-fitting lid. Shake well to mix. (Can be made up to 1 day ahead to this point.) Toss with shrimp. Chill until ready to serve.
