Frozen Raspberry Cheesecake

1-200g pkg Almond Amaretti cookies, finely crushed
1/4 cup (50 mL) melted butter
1 egg, separated
1 cup (250 mL) real Whipping Cream
2-250g pkgs cream cheese, softened
2/3 cup (150 mL) icing sugar
1 cup (250 mL) frozen raspberry juice concentrate, thawed
1/2 tsp (2 mL) almond extract
Combine crushed cookies with butter and press in bottom of 9-inch (23 cm) springform pan. Place in freezer while preparing filling. In small bowl, beat egg white until stiff. In another bowl, beat real Whipping
Cream until soft peaks form. In large bowl, beat cream cheese until smooth. Add egg yolk and sugar; beat until blended. Gradually beat in raspberry juice and almond extract. Stir in egg white and fold in whipped cream; mix well.
Pour into prepared pan and freeze until firm, at least 6 hours or overnight. Before serving garnish with fresh fruit and mint leaves, if desired.
Makes 8 to 10 servings.
