450 g (1 lb) gemelli
250 ml (1 cup) seedless red grapes, halved
125 ml (1/2 cup) pistachio nuts, chopped
1 L (4 cups / 240 g) mesclun (gourmet salad greens)
200 g (7 oz) Camembert cheese, rind removed and diced
15 ml (1 tbsp) chives, snipped
15 ml (1 tbsp) flat parsley, chopped
15 ml (1 tbsp) fresh basil, shredded
50 ml (1/4 cup) freshly squeezed lemon juice
125 ml (1/2 cup) olive oil
Salt and freshly ground pepper, to taste
- In a large pot, cook the pasta al dente, following package directions. Drain, rinse and transfer to a large bowl.
- Add the grapes, pistachios, mesclun and cheese.
- In a separate bowl, combine the chives, parsley, basil, lemon juice and oil.
- Pour the dressing over the pasta, season with salt and pepper, and toss well.
- Serve chilled.
