Roasted Carrots and Parsnips
The maple syrup in this recipe makes sweet-tasting vegetables that even children will enjoy.

1 lb (500 g) parsnips, peeled and cut into 1 inch (2.5 cm) pieces
1 lb (500 g) carrots, peeled and cut into 1 inch (2.5 cm) pieces
1 cup (250 mL) onions, cut into wedges
2 tbsp (25 mL) vegetable oil
1 tsp (5 mL) dried thyme
2 tbsp (25 mL) maple syrup
1 tbsp (15 mL) Dijon mustard
- Preheat oven to 400°F (200°C) Place parsnips, carrots, onions, oil, and thyme in prepared baking dish; toss until vegetables are well coated with oil. Roast in oven for 30 minutes.
- Meanwhile, in a small bowl, combine maple syrup and mustard. Pour over vegetables; toss to coat.
- Roast for another 20 to 25 minutes or until vegetables are tender and golden, stirring once.
