Spinach, Mushroom and Brie Grilled Cheese Sandwiches

1 tbsp (15 mL) extra-virgin olive oil
½ lb (250 g) cremini mushrooms, trimmed and sliced
10 oz (300 g) baby spinach, rinsed and dried
kosher salt and freshly ground black pepper
8 slices multigrain or whole wheat bread
6 oz (175 g) brie cheese, crust on or off, thinly sliced
2 tbsp (25 mL) soft butter—optional
- Heat olive oil in a large skillet. Add mushrooms and cook until any liquid in pan evaporates. Add spinach and cook until just wilted. Season to taste with salt and pepper. Drain if necessary.
- Make sandwiches by topping 4 slices of bread with mushrooms and spinach. Add slices of cheese in a single layer. Top with remaining bread.
- Brush each side of sandwich with a little soft butter, if using.
- Grill sandwiches in a panini maker until cheese melts, or heat a heavy skillet on medium high, brush with olive oil and cook sandwiches, pressing firmly, a few minutes on each side, until cheese starts to melt and sandwich is browned.
